La Jaula de Papel began as a family notebook of recipes — a “paper cage” holding years of Andalusian home cooking. Today that notebook is our kitchen in the Casco Antiguo: salmorejo and croquetas made fresh every day, ibérico carved to order, and fish that arrives before the city wakes.
We are small on purpose. A handful of tables inside, a terrace under the trees, and the belief that a visitor should eat exactly what the neighbours eat.
